Asian Persuasion

We were having a fever for Orange Chicken and some fried rice tonight...and I somehow thumbed through my cookbooks and found a recipe for Orange Tofu.  Alicia C. Simpson never seizes to fill us up with amazingly delicious, soulful food in Vegan Comfort Food, It definitely has become one of my most used cookbooks!  I chose to do the baked version because I was already doing some fried rice too, but she does a yummy fried recipe as well.  Definitely a party pleaser!

I was also really happy how the fried rice came out this time around and it was SO easy.  Usually with my fried rice, it ends up being a fried dish of veggies I need to use up.  This time, I used some green onions, kale, carrots, and celery.  I sauteed them in about 1-2 tbsp sesame oil with a couple dashes ginger.  Add the cooked brown rice ( about 1-2 cups), and cook for another 5 minutes.  Simple as that!!
