Driving slow on Sunday Morning

and I never want to leave.  Ever.  Sunday morning and I have quite the beautiful romance.  I wake up to sunshine and consider making my first cup of coffee in three weeks today. I seem to have a little pep in my step, even if it is to walk outside and take the trash out.  We have passed our honeymooning stage, but it is still so Catalina, Greece, Virgin Islands perfect.  Sunday is my day for cooking breakfast for all  I adore, and romancing the sunshine.  Reading books, sipping tea, reaching to the moon in upward facing dog,  and dreaming of summer rays and ocean swimming.  This is my picture perfect Sunday and to commemorate the day, here is my Sunday Morning scramble & hash. 
Potato Hash
2 tbsp EVOO
2 gold Yukon Potatoes
1/2 onion
I chose cumin, paprika, sea salt, pepper, and a tiny bit of rosemary, but whatever you prefer

Saute' the potatoes for 20-30 minutes on Medium heat or until tender.

My tofu scramble veggies this time consisted of squash, zucchini, kale, & mushrooms.  Saute' the veggies in a tbsp olive oil until tender.  Crumble in half a package of firm tofu. Add spices of your choice and cook a couple more minutes.
