Yum Yum Fried Rice

Before jumping on the veggie train, I definitely had some stigma with rice. I'm not sure where it came from, but to be honest, I would probably have rather eaten a paper sack than chowed down on the whole grain goodness.  Well, I am here as a support group to ease you into the idea that rice doesn't have to be that sticky brown stuff you push around on your plate.  Now, rice has become a staple in my diet for many reasons.   One, whole grains are SO important and I get really tired of using bread as the god of  all whole grain goodies.  Two, rice is so versatile!  I try to make a big bulk amount so by the end of the week, I may have eaten a whole lot of rice- but in so many disguised forms. So sneaky, that rice character!

  One of my favorites is the veggie fried rice from The Kind Diet.  It is so yummy, and despite popular belief a healthy amount of fried food cooked in the right way is really healthy for your digestive system.  In other words, it helps you poop! :)
Also, it is a great way to clean out those veggies that have been sitting in the fridge for a while and it is so quick and easy.
 
This batch, I threw in mushrooms, carrots, daikon, scallions, green pepper, and broccoli.  Make sure you chop all of this stuff before, it makes the process SO much easier.

Yum Yum Fried Rice-
1 C Brown Rice
2 Tbs Sesame Oil 
1-2 Garlic cloves, minced (optional)
Any assortment of veggies your little heart desires
Olive oil if needed




-Cook 1 cup rice to 1.5 cups water in pot.  Simmer for twenty minutes.
-Once rice is finished, heat sesame oil in wok or nonstick skillet.  If you like a little garlic ( I think that may be everyone on the planet but myself) heat a minced clove or two.  Be careful not to burn it!
-Add all your delicious sliced veggies and allow to cook for 4-5 minutes. If veggies stick, add some olive oil.
-Stir in the not-so-terrible brown rice and mix all together and heat for another 5 minutes.
