New Years Slacker

 
Hey folks, well, it's obvious that I am a slacker.  But let me tell you the good news:  I've been cooking up a storm!! These recipes are finally making it to the site, and hopefully you will be overloaded with goodness.
 There's a lot of simple lunches or dinners for the days I work, but also some really delicious meals that I could spend some time loving on it
.
Derek and I love soup.  We usually buy some Organic creamy tomato soup as a standby.  It's such a quick, easy meal that makes him happy, but soup is also really great for the intestinal tract so we try to add it in at least a couple times a week.  I usually add salad for me, and make him a wrap of some kind.  I made some really simple heart-shaped biscuits and made a "Caesar salad" with leftover quinoa. if you haven't met quinoa, let me introduce you.  Fabulous reader, meet the most delicious and nutty grain that will ever enter your mouth.  Quinoa is an ancient food originating from South America, and it's actually not a "grain"at all, but a chenopod related to beets and tumbleweeds.  I know, after the talk of tumbleweeds you're stomachs are a-rumblin'. :)  Do yourself a favor, if you haven't already tried it, go out and take some home...you won't regret it.
 

Whole Wheat Biskies
2 Cups Whole Wheat Pastry Flour
1 Tbsp Baking Powder
1Tsp Salt
1/4 Cup Safflower Oil
3/4 Cup Unsweetened Nut or Hemp Milk

Preheat oven to 450F.
Mix dry ingredients in a mixing bowl.  Blend oil and milk together thoroughly then add to dry ingredients.  Mix well, then roll out dough on floured surface. (if you are crunched for time, you can just do these drop style, ball up 2 in. from bowl and drop onto greased baking sheet.) Cut out shapes and bake 8-10 minutes or until brown.



Caesar Dressing

1/2 Cup Vegan Mayo
1Tbsp Capers
1 Tsp Lemon
1 Tsp Dijon Mustard
pinch of salt, pepper, &  paprika

Mix and voila'.
