Hakuna Frittata...

 What a wonderful phrase!!

This recipe is one of my favorite and very easy morning breakfasts!  It will make your tum-tum beg for more...
This one is just like the scramble that you can throw in whatever you're feeling for the day.  Especially if it's meatless and animal-friendly. :) The outside gets brown, while the inside is so gooey and delicious!

Hakuna Frittata
  • 1/4 cup olive oil
  • 2-4 green onions, chopped
  • 1 garlic clove, minced
  • 2 medium potatoes, thinly sliced
  • 2 Tbsp Soyrizo (or whatever else you decide)
  • 1 tsp sea salt
  • 1/2 tsp pepper, divided
  • 1 package firm tofu
  • 1/4 cup soy sauce
  • 4 tbsp nutritional yeast
Preheat oven to 325 degrees. Heat oil in a skillet on med-high heat.  Saute' onions and garlic for a couple minutes until browned, being careful not to burn.  Add in potatoes and Soyrizo and cook for about 5 minutes.  Turn off heat and put skillet aside to cool.  Use food processor to pulse tofu, nootch(nutritional yeast), sea salt, pepper, soy sauce.  Then add in potatoes, onions, and  garlic.  Pulse until combined, then add into greased pan. ( I used a bread loaf pan, and it created a nice thick frittata, but you can use whatever you choose depending on the thickness you desire.) Cook for 25-30 minutes or until browned.


Hakuna Frittata, it means no worries!
