Here I am...

...Completely knee deep in food the past month, but how would you know?  I'm sorry I have yet again abandoned you, without even an ounce of apology or warning.  Just know, I love you. But I might love food more...and that's why I have unfortunately replaced typing with stuffing my face.

But, now that I have come forward with my problem, maybe it is a step in the right direction.  Good news is this:
1.) It was all vegan, yummy, and healthy...mostly.
2.) I have LOTS of goodies to share with you!
3.) They say absence makes the heart grow fonder...so now that I am back, you can probably throw that life size cut out of me away.  I am here for real!

Now, moving on.  Let's meet your replacements:


Whole Wheat Cheddar and Chive skillet biscuits.  The cheddar flavor is recreated with nutritional yeast and a tiny splash of soy sauce.  I served this with a big heaping bowl of D's chili, and it was fantastic!



I love mushroom anything, but these really took the taco for the best freakin' portobella mushroom and tofu tacos.  UH-may-ZING!


Homemade country fried seitan topped on a bed of spinach and apple dijon goodness.

Eggplant and Leek crostinis with a miso dressing reduction kind of stole the show for this one.  The dressing and eggplant were so sweet and juicy.  Loved these guys.


According to my Papa, soup is for sick people. So whenever I am feeling a little under the weather, I pack lots of greens, garlic, and other veggie goodness into a pot and let it simmer.

Whether it's old man folk or just the soothing warm aroma filling our apartment, the old man knows a thing or two about making me feel better.







"Tuna" Sandwich made with garbanzo beans pureed with kelp powder, dijon mustard, 1/2 a nori sheet, and a little salt & pepper. Side of potato salad made with soaked and pureed cashews, fresh dill, and sweet & spicy mustard.

 Such a simple meal, but probably one of my favorites.



Now, have your feelings of abandonment been replaced with feelings of hunger pangs? My job is done.
