What the Hell is a Tofurkey, Anyway?

How many people really know what is in a Tofurkey?  Anyone? Bueller?  I think that there's this idea that Tofurkey is the best option for a Vegan Thanksgiving...but I'm here to tell you that there's no way in Hell I was going to let my Thanksgiving go down like that.   I'm not bashing the Tofurkey peeps out there, but I can show you another option if you're not committed to eating something that looks like...

I prepped everything the night before so that after my eight hour shift dealing with Coop Crazies, I could just prop my feet up and not worry about the details. What turned into what I thought would be a small intimate meal, really turned into something so special.  I was so in love with my little vegan feast and wanted to show you that Vegheads don't just have to resort to a boxed tofu dinner.  You can stuff yourself with a healthy meal, without going crazy over the details. 

My protein for the meal came from the lovely Susan Voisin at FatFree Vegan.  It probably was my favorite part of the meal, and once again Susan has rocked my vegan palate.  The flavor in the Meatless Loaf is insane, and it makes delicious leftovers.  What would Thanksgiving be without the leftovers?


As a kid, I waited all year for my Grandma's mashed potatoes, so it always ends up being MVP on my plate.  This year, my mashed potatoes were prepared like any old fashioned mashed tater (if they were prepared with Earth Balance and almond milk) but chives and caramelized onions were added into the fluffy little clouds of perfection.  Lovely!


Green beans were prepared by sauteing up a couple cloves of garlic in some safflower oil.  Add beans and a couple dashes of red pepper flakes.  No green bean has ever tasted so good!

Probably ending up being my favorite unscripted part of the meal.  This could make a wonderful appetizer or small plate dish.  Crostinis topped with sauteed kale and Baby Bella mushrooms drizzled with a balsamic reduction.






What Thanksgiving meal would be complete without gravy?  Sage gravy is the one food I would choose if I were stuck on an island.  I could bathe in this stuff.  You think I'm joking?  Just give it a try. 




Just don't come to me when you can't stop yourself from taking gravy shots after a long day at the office.
