Bon Appetit

Fall has been here and its been full blown cold weather lately.  Because I live in a very old apartment and fear what might be living in our heating systems,  I have found that I would rather turn on the oven and warm up this tiny home with something baked, broiled, or roasted.  This works out, because the apartment is about the size of one of those cars that look like tissue boxes and it warms up quite nicely afterward.  Plus, if you have guests over, they might mistake you for a vegan Julia Child.



Okay, or maybe not.

Anyway, moving on.  Today I warmed up my kitchen with this fancy little feast.  Inspired by one of my favorite chefs who owns Ike's Quarter Cafe in Nevada City, this man could convince a new orleans native to try some of his veganized stuff.  His food is uhhh-mazing.

So, after skimming through cookbook recipes, who did I decide to go with?  Isa Chandra Moskowitz, of course! Her recipe for Hot Sauce Glazed Tempeh and Cajun Stuffed Peppers is something to talk about! It's oh so spicy, and totally not what I would expect to come from a girl who, in her own words, knows very little about Cajun food.  Could have fooled me!

The peppers were boiled, then stuffed with a saute' of black eyed peas, diced tomatoes, carrots, onions, and jalapenos and then baked for 25 minutes.


The tempeh was boiled and then marinated with wine, ( cheap wine because I wasn't about to let my food drink ANY of this new fancy wine I had on hand.) soy sauce, apple cider vinegar, garlic, cayenne pepper, and hot sauce.  I broiled these suckers for 5 minutes on each side, each time adding a little remaining sauce.

I sauteed up some chard with the remaining marinade and it was so flavorful! Mama likes!
